Almost Vegetarian Minestrone with Pesto
Ingredients
- Onion - 1 head
- Chicken Broth - 2 qt
- Leek - 1 piece
- Carrot - 1 piece
- Fennel - 1 head
- Celery stalk - 2 pieces
- Garlic - 4 cloves
- Potato - 4 pieces
- Thyme - 2 tablespoons
- Canned Sturgeon in Tomato Sauce - 1 can
- Canned Tomatoes (Pelati) - 1 can
- Pesto - 3 tablespoons
Step by Step guide
Step 1
Chop the onion, the white part of the leek, and the carrot into medium pieces.
Step 2
Sauté in olive oil over medium heat, stirring constantly.
Step 3
Meanwhile, crush the garlic cloves with the side of a knife and finely chop them.
Step 4
Trim the celery, cut it lengthwise into 3 strips, and then chop it crosswise.
Step 5
Add the finely chopped fennel bulb, garlic, and celery, and sauté for another 5 minutes, stirring constantly.
Step 6
Peel the potatoes and cut them into cubes about 0.5 cm.
Step 7
Add them to the vegetables and tear the leaves from the thyme stems (if you don't have fresh thyme, skip this step; dried thyme is better added later).
Step 8
Sauté the potatoes for about 5 minutes, then add the canned tomatoes and mix well, simmering for another 5 minutes on low heat, stirring occasionally.
Step 9
Add all the sautéed vegetables to the vegetable broth and bring to a boil (if using dried thyme, add it at this stage!).
Step 10
Then add the Heinz canned beans in tomato sauce (I haven't tried any other brand).
Step 11
Bring to a boil and add 3 tablespoons of pesto. The better the quality of the pesto, the tastier it will be. The ideal option is freshly made pesto, but store-bought works very well too.
Step 12
Remove from heat and cover for about 1 hour.
Step 13
Serve with garlic bread.
