Ingredients
- Wheat Flour - 12.7 oz
- Water - 12 fl oz
- Vegetable Oil - 1 fl oz
- Salt - 0.4 oz
- Turmeric - 0.3 oz
- Salad Potatoes - 6 pieces
- Coconut flakes - 1.1 oz
- Toasted Sesame - 0.5 oz
- Brown Sugar - 0.4 oz
- Herbs - to taste
- Red Curry Powder - 0.1 oz
Step by Step guide
Step 1
Filling. Make a puree from freshly boiled potatoes. Add sesame seeds, coconut flakes, herbs, spices, sugar, and salt. Mix well.
Step 2
Dough. Combine flour, salt, and turmeric. Add water and oil to the dry mixture and knead the dough until soft and elastic, adding water if necessary.
Step 3
Cover the dough with a damp cloth and let it rest at room temperature for at least 30 minutes.
Step 4
Roll out the dough into a thin rectangular sheet (3–4 mm thick), evenly distribute the filling.
Step 5
Roll into a tight log and carefully cut into rounds (1–1.5 cm thick) with a sharp knife, without breaking the structure. Gently flatten them with your hand.
Step 6
Alupatras can either be baked in the oven (at 356°F for 20–30 minutes) or fried over medium heat.
