Ingredients

  • Mirin - 2 tablespoons
  • Chili jam - ½ tablespoon
  • Honey - 1 tablespoon
  • Tahini - 5 oz
  • Red Food Coloring - to taste
  • Fish Oil - 1 teaspoon
  • Water - 2 tablespoons
  • Spaghetti - 0 oz
  • Ground meat - 15 oz
  • Panko breadcrumbs - 0 oz
  • Grated Ginger Root - 2 tablespoons
  • Scallions - 0 oz

Step by Step guide

Step 1

In a small bowl, mix mirin, 60 ml soy sauce, chili paste, and honey, whisk until smooth. Set aside until serving.

Step 2

Preheat the oven to 250°F. Line two deep baking sheets with parchment paper.

Step 3

In a small bowl, mix tahini, food coloring, soy sauce, and fish sauce, whisk until smooth.

Step 4

Mix 2 tablespoons of the tahini mixture with 2 tablespoons of water. Combine this mixture with a cup of fried noodles in a bowl.

Step 5

Spread the cooked spaghetti in an even layer on the prepared baking sheets.

Step 6

Bake for about 10 minutes, then let cool completely. Increase the oven temperature to 375°F.

Step 7

Mix the remaining tahini mixture with the ground meat, panko breadcrumbs, ginger, and finely chopped green onion.

Step 8

Form meatballs by scooping 2 tablespoons of the mixture at a time and rolling it into a ball. Insert eight noodle legs into each ball, four on each side. Place on the prepared baking sheet.

Step 9

The meatballs can be formed in advance and kept in the refrigerator for up to 4 hours.

Step 10

Bake the meatballs for about 15 minutes. Serve immediately with the sauce.
