Description
A dish from the 'what's in the fridge' category, so I would separately sauté the eggplant (peeled and pre-soaked to remove bitterness) — this will make it even more tender. You can skip the mushrooms or replace them with fresh white ones (be careful, as a large quantity can overpower the aroma and flavor). Enjoy your meal! Very simple, but very delicious.
Ingredients
- White Part of Leek - 1 piece
- Green onion tops - 1 piece
- Fresh Mushrooms - 1 piece
- Marinated cherries - 3 pieces
- Brown Sugar - to taste
- Butter - 2 tablespoons
- Salt - to taste
- 10% cream - to taste
- Olive Oil - to taste
- Shallot - 1 piece
- Herbs - to taste
Step by Step guide
Step 1
Melt the butter in a skillet.
Step 2
Chop the leek, add it to the skillet, sprinkle with brown sugar, and stir for a couple of minutes.
Step 3
Meanwhile, finely chop the shallot and mushrooms, and add them to the leek.
Step 4
Separately, chop the fresh green onion tops and tomatoes (it doesn't matter if you have cherry or regular ones — the main thing is that they are very sweet, preferably a bit overripe and soft), mix them, season with salt, and drizzle with olive oil (don't be stingy!).
Step 5
The vegetables in the skillet should turn golden, then add the tomatoes and green onion, and sauté lightly again.
Step 6
Pour in the cream (just a little, to add tenderness and softness to the dish).
Step 7
If desired, you can add a bit of basil, but be careful. No acidity (lemon, balsamic)!!
Step 8
Serve garnished with corn or arugula — to your taste.
