- Marinated cherries - 2 lbs
- Shallot - 4 pieces
- Chili Flakes - ¼ teaspoon
- Balsamic Vinegar - 2 teaspoons
- Marjoram - 2 tablespoons
- Ciabatta - 2 lbs
- Olive Oil - to taste
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
In a bowl, mix halved tomatoes, 60 ml of olive oil, finely chopped shallots, vinegar, and red pepper flakes. Transfer to a glass baking dish. Bake in the oven for about 45 minutes, until the tomatoes are soft and release their juices, stirring occasionally. Add marjoram, and season with salt and pepper.
Step 3
Slice the ciabatta horizontally in half, lightly drizzle with olive oil, and place cut-side up on a baking sheet. Top with the tomato mixture and bake in the oven for about 10 minutes, until the bread is crispy. Transfer to a board, sprinkle with a little marjoram and black pepper. Cut into small pieces.
