- Celery salt - 19.4 oz
- Green Apples - 2 pieces
- Onion - 1 head
- Butter - 2.1 oz
- Chives - 1.8 oz
- Chicken Broth - 1 qt
- Grapeseed Oil - 4 fl oz
- Smoked Brisket - 1.8 oz
- Salt - a pinch
Step by Step guide
Step 1
Chop the celery, apples, and onion into small cubes, and place them in the bottom of a large pot with butter. Heat on the stove, stirring until the apple cubes become translucent but have not yet browned. Then, pour in the chicken broth and bring it to a gentle boil. Reduce the heat and simmer the soup covered for about twenty-five minutes, stirring occasionally.
Step 2
Arrange thin slices of bacon on a baking sheet lined with parchment paper, place it in a preheated oven at 374°F, and keep it there until the meat becomes crispy and golden brown, which should take about eighteen to twenty minutes. Then transfer the bacon to paper towels and break it apart.
Step 3
Cool the contents of the pot, transfer to a blender, and blend the soup until smooth. You will likely need to do this in batches. You can adjust the consistency as needed by adding more broth with a ladle. Pour the soup back into the pot and season with salt and pepper to taste.
Step 4
Rinse the blender and this time blend the chopped chives, grape seed oil, and a pinch of salt in it.
Step 5
Reheat the soup — if it has cooled down significantly, ladle it into bowls, sprinkle with meat chips, and drizzle with onion oil.
