Apple Curry Cream Soup
Ingredients
- Butter - 1 tablespoon
- Shallot - 2 pieces
- Red Curry Powder - 1½ tablespoons
- Grated Ginger Root - 2 teaspoons
- Green Apples - 2 pieces
- Potato - 1 piece
- Coarse Salt - to taste
- Cream (40%) - ½ cup
- Chicken Broth - 3¾ cups
- Ground Black Pepper - to taste
- Sour Cream - to taste
Step by Step guide
Step 1
Peel the apples, remove the cores, and cut them into small cubes. Peel the potato and cut it in the same way. Peel the shallots and finely chop them.
Step 2
Melt the butter in a saucepan over medium heat. Add the shallots and sauté until soft for a couple of minutes. Add the ginger and curry powder and stir for a minute. Add the apples, potato, and broth. Season with salt. Bring to a boil over medium heat and cook until the potato is tender, about 12 minutes. Remove from heat and let it cool slightly.
Step 3
Using an immersion blender, puree the soup until smooth, add the cream, and season with salt and pepper. Gently heat without bringing it to a boil.
Step 4
Serve with sour cream.
