- Water - 7 fl oz
- Dijon Mustard - 1.5 oz
- Agar-Agar - 0.1 oz
- Champagne Vinegar - 8 fl oz
Step by Step guide
Step 1
Dissolve the agar-agar in water and blend it to eliminate any lumps.
Step 2
Add sugar to the water with agar-agar and pour in white wine vinegar. Cook the mixture to make a syrup, simmering for 15 minutes.
Step 3
Peel the apples, remove the core, and cut them into small cubes.
Step 4
Immerse the apples in the syrup and simmer them for 30 minutes over low heat.
Step 5
When the apples are ready, add the mustard and mix thoroughly.
Step 6
Serve cold, for example, with hard and soft cheeses.
