Description
Fresh apricots can be replaced with dried apricots.
Ingredients
- Pitted Wild Apricots - 17.6 oz
- Sugar - 3 tablespoons
- Apple - 17.6 oz
- Potato protein - 2 teaspoons
- Water - 17 fl oz
Step by Step guide
Step 1
Wash the ripe apricots, remove the pits, and cook them with 500 ml of water until soft, then strain through a sieve or colander.
Step 2
Add 500 ml of hot water, sugar, and the apples, peeled and sliced or julienned, to the resulting puree, and place in a pot over heat; as soon as the soup boils, pour in the diluted potato starch and bring back to a boil while stirring continuously. For flavor, you can add a little citric acid.
Step 3
Serve the soup chilled. You can serve sour cream with the soup.
