This recipe is designed for a three-liter jar.
Ingredients
- Pitted Wild Apricots - 21.2 oz
- Water - 2½ l
- Sugar - 7.1 oz

Prepare all the ingredients.

Thoroughly wash the apricots, then cut them in half and remove the pits.
Step 3
Sterilize the jar over steam for 20 minutes.
Step 4
Place apricots at the bottom of the jar — they should fill the jar to about one-third.
Step 5
Pour boiling water over the apricots in the jar and let them sit for 15 minutes.
Step 6
Then pour the water from the jar into the pot.
Step 7
Add sugar to the water and bring it to a boil.
Step 8
Return the hot syrup to the jar with the apricots. The syrup should reach the rim of the jar. If there isn't enough, you can add boiling water.
Step 9
Screw the lid onto the jar, turn it upside down, cover it with a blanket, and leave it until completely cool.
Step 10
Store the apricot compote in a dark, cool place.
