- Pitted Wild Apricots - 2 lbs
- Sugar - 28.2 oz
- Lemon - 1 piece

Step 1
Prepare all the ingredients. Wash the apricots.

To peel the apricots, immerse them in a large pot of boiling water for 30 to 60 seconds.
Step 3
Transfer the apricots to ice water for one minute.
Step 4
Peel the apricots and remove the pits.
Step 5
Blend the flesh of the apricots.
Step 6
In a pot, combine apricot puree, sugar, and lemon juice. Place over medium heat and bring to a boil.

Cook the jam for 25–30 minutes, stirring occasionally. The jam should thicken.
Step 8
At the end of cooking, remove any foam that has formed on the surface.

Sterilize the jars over steam for 15 to 20 minutes.

Pack the jam into jars and seal them.
