Description
For this Italian appetizer, you can use various fillings, including anchovies, sardines, or shrimp. For convenience in preparing this version of arancini, use mini mozzarella.
Ingredients
- Arborio rice - 8.8 oz
- Breadcrumbs - 2.6 oz
- Chicken Egg - 3 pieces
- Wheat Flour - 2.6 oz
- Russian Cheese - 1.8 oz
- Butter - 1.8 oz
- Salt - to taste
- Melted Cheese - 1 piece
- Scallions - 0.7 oz
- Vegetable Oil - 3 fl oz
Step by Step guide
Step 1
Pat the mozzarella dry and cut it into small pieces. Chop the onion and mix it with the mozzarella. Divide the rice mixture into portions, each about the size of a small egg. Flatten each ball into a disc, place a piece of mozzarella and onion in the center of each disc, and shape it into a ball.
Step 2
In separate bowls, place the flour, breadcrumbs, and 1 lightly beaten egg.
Step 3
In a large skillet, heat vegetable oil. Roll the prepared rice balls in flour, then dip them in egg, and coat them with breadcrumbs. Fry in hot oil until golden brown. Remove to a paper towel to drain excess oil. Serve hot.
Step 4
Cook the rice until it's half-done. Grate the Russian cheese on a coarse grater, transfer it to a bowl, and add the cooked, cooled rice. Also add butter, salt, and 2 eggs. Mix well.
