Artichokes with Ham under a Crust
Ingredients
- Salt - to taste
- Gruyère cheese - 2.3 oz
- Milk - 17 fl oz
- Wheat Flour - 2 tablespoons
- Safflower Oil - 2 tablespoons
- Butter - 0.9 oz
- Ham - 5.3 oz
- Artichoke bottoms - 12 pieces
- Lemon - 1 piece
Step by Step guide
Step 1
Cut the lemon in half and squeeze the juice of one half into a large bowl of water. Save the lemon zest. Trim the stems of the artichokes and remove the tough outer leaves. Cut the tips of the remaining leaves. Open up and remove the choke. Drizzle the artichokes with the juice from the remaining lemon half and place them in the lemon water.
Step 2
Bring salted water to a boil in a large pot, add the lemon zest and artichokes, and bring back to a boil. Reduce the heat, cover, and simmer for 30-60 minutes until they are tender. (Try gently pulling off a leaf – it should come off easily). Drain well by turning the artichokes upside down and pressing them.
Step 3
Place the artichokes in a baking dish with the open side facing up. Fill with diced ham. Preheat the grill.
Step 4
Melt the butter with the oil in a saucepan, stir in the flour, and cook, stirring, for 2 minutes. Then slowly pour in the milk while continuing to stir, and cook for another 6 minutes. Season with salt and pour the sauce over the artichokes. Sprinkle with grated cheese and place under the grill for 10 minutes until the tops are golden brown. Serve immediately in the same dish.
