Asian Chicken Soup

Ingredients

  • Skin-On Chicken Breasts - 6.3 oz
  • White Cabbage - 3.5 oz
  • Chicken Broth - 22 fl oz
  • Cilantro - 0.2 oz
  • Onion - 1.2 oz
  • Scallions - 0.1 oz
  • Peanut Sprouts - 0.7 oz
  • Mild Chili Spice - 1 piece
  • Soy Sauce - 1 fl oz
  • Rice Vinegar for Sushi - 0 fl oz
  • Clove - ½ g
  • Garlic - 1 clove
  • Rice Noodles - 1.8 oz

Step by Step guide

Step 1

Peel and slice the onion into large half-rings, crush the garlic, peel it, and chop it coarsely. Remove the seeds from the chili pepper and cut it in half lengthwise, chop half of the cabbage coarsely, and shred the remaining part.

Step 2

Bring the broth to a boil, add the onion, garlic, coarsely chopped cabbage, one part of the chili pepper, and the clove. Boil on high heat for 10 minutes, then add the rice vinegar and strain immediately through a sieve.

Step 3

Cut the chicken fillet into thin strips.

Step 4

Pour boiling water over the noodles for 6 minutes (do not boil the noodles), then drain the water.

Step 5

Bring the strained broth to a boil, add the chicken, shredded cabbage, and cook over medium heat for 3 minutes, remove from heat, add the soy sauce, and stir.

Step 6

Finely chop the cilantro, soybean sprouts, and remaining chili pepper, and slice the green onion thinly on the diagonal.

Step 7

Place the noodles in a bowl, add the soybean sprouts and chili pepper, top with chicken, and pour over the broth. Garnish with cilantro and green onion, and serve.
