Ingredients
- Green Peas - 3 lbs
- Safflower Oil - 3 tablespoons
- Scallions - ½ bunch
- Sugar - 1 tablespoon
- Serrano Chili - 3.5 oz
- Canned White Asparagus - 4 lbs
- Chicken Egg - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Heat the sunflower oil in a saucepan. Add finely chopped green onion and cook over low heat, stirring, for 3-4 minutes – do not let it brown. Add the peas and cook for a few more minutes. Pour in 275 ml of water, add sugar, cover the pot with a lid, and simmer for 15 minutes. Then add the finely chopped ham and cook for another 20 minutes until the peas are tender. Season with salt.
Step 2
Meanwhile, peel and trim the asparagus and cut it into pieces about 2.5 cm long. In a large pot, bring salted water to a boil, add the asparagus, cover with a lid, and cook for 10 minutes until it becomes tender. Drain the water.
Step 3
Combine the asparagus with the ham and sauce in a warmed dish. Garnish with slices of hard-boiled egg.
