Ingredients

  • Pork chop with bone - 6 lbs
  • Pork Neck - 2 pieces
  • Oxtail - 17.6 oz
  • Onion - 4 pieces
  • Carrot - 4 pieces
  • Bay leaf - to taste
  • Salt - to taste
  • Green peppercorns - 15 pieces
  • Garlic - 10 cloves

Step by Step guide

Step 1

Wash and trim the meat.

Step 2

Place all the meat in a large pot, cover with cold water about 8-10 cm above the meat, bring to a boil, and then drain the water.

Step 3

Rinse the meat again, place it back in the pot, cover with cold water, bring to a boil, and skim off the foam.

Step 4

Reduce the heat to low, add the onion, carrot, bay leaf, pepper, and simmer on very low heat for 7 hours.

Step 5

Add 7-10 cloves of garlic, salt to taste, check the flavor, and cook for another hour.

Step 6

Remove the meat, separate it from the bones, and place it in a wooden bowl.

Step 7

Chop the meat to the desired consistency and distribute it into bowls.

Step 8

Slice the cooked carrots into rounds and use them to garnish the aspic.

Step 9

Strain the broth through cheesecloth (or a colander) and pour it over the bowls.

Step 10

If the broth is rich, the aspic will be ready in about two to three hours. If not, it will be ready by tomorrow morning.

Step 11

The most important thing: you don't have to cook the aspic all at once. You can cook it for about two hours and finish it the next day. That's it. Enjoy your meal.
