Aspic from Pork Tongue
Ingredients
- Chicken Egg - 2 pieces
- Beef tongue - 1 piece
- Green Peas - 2 tablespoons
- Olives stuffed with lemon - 2 tablespoons
- Onion - 1½ heads
- Carrot - 2 pieces
- Bay leaf - 2 pieces
- Green peppercorns - 3 pieces
- Allspice berries - 3 pieces
- Gelatin - 0.7 oz
- Herbs - ½ bunch
Step by Step guide
Step 1
Boil the tongue in salted water with the addition of bay leaves, carrots, onions, black pepper, and allspice berries. After boiling, peel the tongue; it's easy to do if you place it in cold water for a few minutes. Slice the cooked tongue.
Step 2
Dissolve the gelatin in warm broth in which the tongue was boiled, after removing all spices and straining it through a fine sieve.
Step 3
Prepare the boiled eggs, boiled carrots, canned green peas, olives, onions, and herbs for serving.
Step 4
Arrange the tongue and vegetables on a serving platter, garnish with herbs, green peas, and olives. Pour the prepared gelatin over and place in the refrigerator until set.
