Atlantic Salmon with Dill Mayonnaise
Ingredients
- Dry White Wine - 2 qt
- Onion - 2 heads
- Champagne Vinegar - 3½ tablespoons
- Ground clove - 10 pieces
- Lemon - 1 piece
- Carrot - 4 pieces
- Bay leaf - 2 pieces
- Parsley - 4 stems
- Green peppercorns - 1 teaspoon
- Salmon - 5 lbs
- Chicken Egg - 1 piece
- Whole egg - 1 piece
- Meyer Lemon Juice - 1 tablespoon
- Olive Oil - 12 fl oz
- Dill - 2 tablespoons
- Spices - to taste
Step by Step guide
Step 1
In a pot, pour in the wine, 3 tablespoons of vinegar, and 2.5 liters of water.
Step 2
Mix the finely chopped onion with the cloves and add to the wine mixture along with the chopped carrots, bay leaves, parsley, and black pepper. Bring to a boil, reduce the heat, and simmer for 30–35 minutes. Cool and transfer to a fish dish.
Step 3
Place the whole cleaned fish in the dish with the marinade and cover. Bring to a boil, reduce the heat, and simmer for 10–15 minutes. Remove from heat and let cool in the sauce.
Step 4
In a blender, whip the egg, yolk, lemon juice, and remaining vinegar for about 10 seconds. Very slowly, while continuing to whip, pour in the oil and whip until creamy. Transfer the mayonnaise to a bowl and add finely chopped dill and spices.
Step 5
Transfer the fish to a serving plate, slice, and serve with the mayonnaise.
