Autumn Minestrone
Ingredients
- White Beans - 7.1 oz
- Bay leaf - 1 piece
- Potato - 1 piece

- Spanish onions - 2 heads
- Carrot - 2 pieces
- Celery stalk - 2 pieces
- Fennel - ½ piece
- Garlic - 3 cloves
- Fresh basil leaves - 0.7 oz
- Canned Tomatoes (Pelati) - 28.2 oz
- Red Grape Juice - 8 fl oz
- Young zucchini - 2 pieces
- Spinach - 7.1 oz
- Chicken Broth - 19 fl oz
- Pasta (corkscrew) - 1.9 oz
- Parmesan Cheese - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Soak the beans in cold water overnight.
Step 2
The next day, drain the water, add the beans to a pot of water along with the bay leaf, crushed tomato, and peeled potato: this will add flavor to the beans and soften their skins. Cook until the beans are tender — about an hour.
Step 3
While the beans are cooking, prepare the soffritto. Finely chop the onion, carrot, fennel, celery, and basil stems (without the leaves). Cut the bacon into small pieces.
Step 4
Heat olive oil in a saucepan and add the chopped bacon, onion, carrot, celery, fennel, garlic, and finely chopped basil stems. Sauté on low heat, slightly covering the lid, for about 15–20 minutes, until they become soft.
Step 5
Cut the zucchini into quarters lengthwise, then slice them thinly.
Step 6
Add the tomatoes, zucchini, and red wine, and simmer on low heat for 15 minutes.
Step 7
Drain the beans (keeping about half a glass of the cooking water) and discard the bay leaf, tomato, and potato. Season with salt, pepper, and drizzle with a little oil.
Step 8
Add the spinach, broth, and beans to the saucepan.
Step 9
Place the pasta in a plastic bag, removing all the air, and tie the end. Gently crush the pasta with a rolling pin to break it into pieces. Cut off the tip of the bag and pour the contents into the soup. Stir and continue to simmer until the pasta is cooked.
Step 10
If the soup seems too thick, add a little more broth or water to thin it out. Then taste and adjust seasoning with salt and pepper.
Step 11
Serve topped with chopped basil leaves and drizzled with a little extra virgin olive oil. Serve a block of Parmesan cheese and a grater so that everyone can grate their own cheese.
