Description

Ingredients
- Chicken bones - 7.1 oz
- Onion - 1 head
- Celery salt - 1 piece
- Carrot - 1 piece
- Garlic - 1 clove
- Bouquet Garni - 1 bunch
- Orzo Pasta - 4.1 oz
- Farm fresh eggs - 3 pieces
- Salt - to taste
- Meyer Lemon Juice - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cook the chicken broth. Place the chicken bones in a large pot, add the onion, carrot, celery, garlic, and bouquet garni, pour in water and bring to a boil. Simmer for 2 hours, skimming off the foam. At the end, strain through a sieve.
Step 2
Pour two liters of broth into a pot, bring to a boil, add the pasta, and cook for 5 minutes.
Step 3
Whisk the eggs until frothy, then add the juice of one lemon and 1 tablespoon of cold water. Add a ladle of hot broth to the eggs, stir, then add another 1–2 ladles of broth.
Step 4
Pour everything back into the pot, remove from heat, and stir. Season and serve immediately, garnished with a lemon wedge.
