Avocado, Radish, and Basil Soup

Ingredients

  • English Cucumbers - 1 piece
  • Avocados - 2 pieces
  • Natural fat-free yogurt - 3.5 oz
  • Lime Juice - 3 tablespoons
  • Ground chili pepper - 0 oz
  • Green onions - 0.9 oz
  • Chopped Cilantro (Coriander) - 2 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Olive Oil - 1 teaspoon
  • Peeled shrimp - 6.3 oz

Step by Step guide

Step 1

In a blender, combine half of the cucumber and 1 avocado with yogurt, lime juice, jalapeño pepper, green onions, 1 tablespoon of cilantro, 1 cup of ice water, 1.5 teaspoons of salt, and 1/4 teaspoon of pepper. Blend until completely smooth. Transfer to a large bowl.

Step 2

Dice the remaining avocado into 0.6 cm cubes. Stir the avocado and remaining cucumber into the soup. Dilute with 1/2 to 1 cup of ice water if desired. Adjust seasoning with salt and pepper. Chill for about 1 hour.

Step 3

In a large skillet, heat the oil over medium heat. Sauté the shrimp, turning once, until opaque, about 2 to 3 minutes. Ladle the soup into bowls; garnish with shrimp and the remaining tablespoon of cilantro.
