Description

For baba ganoush, it's best to roast the vegetables in advance, the night before. You can also add finely chopped cilantro, green onions, or mint.

Ingredients

  • Eggplants - 2 pieces
  • Orange Bell Peppers - 2 pieces
  • Tahini - 3 tablespoons
  • Lemon - 1 piece
  • Paprika - 1 tablespoon

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Grill the eggplant on a hot grill pan until charred, then bake in the oven for 40 minutes, piercing with a fork beforehand.

Step 3

After 20 minutes, add the red peppers. Remove from the oven and place in a plastic container, then refrigerate.

Step 4

Scoop the flesh of the eggplant out of the skin with a spoon and chop finely.

Step 5

Peel the skin and white membranes from the peppers, chop finely, and mix with the eggplant. Add tahini and freshly squeezed lemon juice (don't worry about it being too sour, as the eggplant will absorb it) and mix well. Sprinkle with ground paprika on top.

Step 6

Serve as an appetizer, as a side dish with grilled meat, or with pita.
