Baba Ganoush with Tomatoes
Ingredients
- Eggplants - 2 pieces
- Garlic - 1 clove
- Toasted Sesame - 1.1 oz
- Tomatoes - 2 pieces
- Olive Oil - to taste
- Parsley - 0.4 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the eggplants and tomatoes. Dry them on a towel.
Step 2
Prick the eggplants with a knife in several places and place them in a preheated oven at 356°F for 30 minutes (flip after 15 minutes and bake for another 15 minutes). Brush the tomatoes with olive oil and leave them in the oven with the eggplants for only 15 minutes.
Step 3
After 15 minutes, flip the eggplants and continue baking. Remove the tomatoes and peel off the skin.
Step 4
Scoop out the flesh carefully to avoid burns. Remember, the purple skin is bitter!
Step 5
In a blender, make a paste from the sesame seeds (you can toast them in a pan beforehand), garlic, tomatoes, salt, and pepper. Add the eggplants and parsley. It should turn into a puree. When serving, you can sprinkle with pomegranate seeds.
