Ingredients
- French Baguette - 1 piece
- Tomatoes - 2 pieces
- Semi-soft cream cheese - 7.1 oz
- Eggplants - 1 piece
- Arugula - to taste
- Spices - to taste
- Minced garlic - to taste
- Olive Oil - to taste
Step by Step guide
Step 1
Slice the baguette lengthwise. Toast the inside of the baguette in a skillet without oil until golden and crispy. Set the bread aside to cool.
Step 2
Heat olive oil in a skillet, add minced garlic, and wait until the garlic starts to release its fragrant aroma and sizzle.
Step 3
Slice the eggplant into thin rounds, and sauté in the skillet with oil and garlic until browned (do not set the stove to the highest setting, or the eggplant will burn).
Step 4
Place the sautéed eggplant on a paper towel to absorb excess oil, and season with salt and pepper, or use any other spices you prefer.
Step 5
Spread cream cheese on the toasted inside of the baguette, alternating layers of sliced tomatoes, eggplant, and arugula (to taste) to fill the entire baguette.
Step 6
In some cases, I sometimes drizzle the finished sandwich with olive oil, lemon juice, and ground black pepper.
