Baked beet greens with garlic and parsley

Ingredients

  • Salt - to taste
  • Butter - 0.9 oz
  • White bread - 1.8 oz
  • Safflower Oil - 3 tablespoons
  • Garlic - 3 cloves
  • Parsley - 3 stems
  • Mustard Greens - 5 lbs

Step by Step guide

Step 1

Cut the stems from the beet greens and chop them into 4 cm pieces. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 35 minutes until tender. Drain the water.

Step 2

Arrange the stems in a baking dish and sprinkle with finely chopped parsley and garlic. Drizzle with oil. Sprinkle with breadcrumbs and place pieces of butter on top.

Step 3

Bake in the oven for 10-15 minutes at 392°F until the top is golden. Serve immediately.
