Ingredients
- Olive Oil - 2 spoons
- Cauliflower - 8.8 oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Spelt - 8.1 oz
- Celery stalk - 1 piece
- Scallions - 1.1 oz
- Meyer Lemon Juice - 1 tablespoon
- Truffle Oil - 1 tablespoon
- Grated Pecorino Pepato Cheese - 1.1 oz

Step 1
Preheat the oven to 428°F. Break the cauliflower into florets and toss them in a bowl with olive oil, seasoning with salt and pepper to taste. Spread them out on a baking sheet lined with parchment paper and roast for twenty to twenty-five minutes.
Step 2
In a pot, bring water to a boil and add half a teaspoon of salt. Stir in the spelt and add a celery stalk. Cook for forty minutes until tender, then drain in a colander, allowing the liquid to drain off and dry, and discard the celery stalk.
Step 3
Gently mix the slightly cooled spelt with chopped green onions, lemon juice, and truffle oil. Finally, add the roasted cabbage and sprinkle everything with grated Parmesan.
