Ingredients
- Eggplants - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
- Apple Cider Vinegar - 2 tablespoons
- Olive Oil - to taste
- Sugar - 1 teaspoon
- 20% Cream - 12.3 oz
- Chicken Eggs - 2 pieces
- Blue Cheese - 2.5 oz
- Garlic - 2 cloves
Step by Step guide
Step 1
Bake the eggplants in the oven or on the grill until cooked. Without peeling, cut them with a knife to the stem and place in a colander for 15-20 minutes to drain.
Step 2
Peel and chop coarsely with a knife. Season with vinegar, salt, sugar, garlic, pepper, and olive oil to taste.
Step 3
For the sauce, take 2 eggs and low-fat cream/sour cream. On the stove, whisk together and stir until thickened. Add salt and pepper.
Step 4
In the hot sauce, add blue cheese to your taste. (NB! The cheese should be good and tasty). Mix the sauce and immediately pour it over the warm eggplants. Serve warm with toast.
