Ingredients
- Spinach - 20.1 oz
- Onion - ½ heads
- Chicken Egg - 4 pieces
- Cream 22% - 2 fl oz
- Butter - 2 spoons
- Salt - to taste
- White Pepper (whole) - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Finely chop the onion and sauté it in oil in a heavy, shallow skillet over medium heat until the onion becomes soft, about five minutes.
Step 2
Add coarsely chopped spinach and sauté it for a couple of minutes under a lid, stirring the contents of the pan a few times during this time.
Step 3
Remove the lid to let any excess moisture evaporate, and cook the spinach, stirring, for three to four minutes. Then pour in the cream, season with salt and pepper, and allow the mixture to thicken slightly — this will take about four minutes.
Step 4
Place the spinach in individual ceramic baking dishes greased with oil. Make a small indentation in the center of each and carefully crack an egg into it. Bake on the middle rack of the oven for about 15 minutes, until the egg whites are set. Serve with bacon and toast.
