Baked Mushrooms Stuffed with Chicken and Cheese
Ingredients
- Chicken fillet - 17.6 oz
- Feta cheese - 2.1 oz
- Sour Cream - 4 tablespoons
- Wheat Flour - 1 tablespoon
- Parsley - to taste
- Ground Black Pepper - to taste
- Salt - to taste
- Vegetable Oil - 1 tablespoon
- Pickled Chanterelles - 10 pieces
- Melted Cheese - 4.2 oz
Step by Step guide
Step 1
Wash and dry the champignon mushrooms, trim and remove the stems with a sharp knife. Line a baking dish with parchment paper and place the mushroom caps upside down.
Step 2
Finely chop the chicken fillet. Heat a skillet with 1 tablespoon of vegetable oil over medium heat, add the chopped chicken, and sauté for about 5 minutes, stirring occasionally.
Step 3
While the chicken is cooking, finely chop the mushroom stems. Add the chopped mushrooms to the skillet with the chicken and cook together for another 5 minutes, stirring occasionally.
Step 4
Mix the flour with the sour cream. Reduce the heat and pour the sour cream into the skillet. Season with salt, add ground black pepper, and stir. Simmer for another 8–10 minutes until the mixture thickens, then remove from heat to cool.
Step 5
While the mixture is cooling, preheat the oven to 356°F.
Step 6
Grate the feta cheese and mix it with the chicken and mushrooms. Add finely chopped parsley and stir.
Step 7
Using 2 tablespoons, evenly distribute the filling among the prepared mushroom caps. Sprinkle a little grated mozzarella on top of the filling.
Step 8
Bake in the oven for 15–20 minutes, then let the mushrooms cool slightly and serve.
