From the recipe of J. Smith. Here it is. Finally, I found it, the best onion dish in the world. Brilliant, devastating! I enjoy it with cod, but it’s equally magical with roasted chicken. Try this immediately. Jamie Smith. You can experiment with the filling; I add some sautéed bacon inside the onions. For those who like it spicier, consider adding a bit more garlic.
Ingredients
- Spanish onions - 4 pieces
- Bacon - 4 pieces
- Minced garlic - 2 cloves
- Dried Rosemary - 1 teaspoon
- Heavy cream - 4 fl oz
- Olive Oil - 1 tablespoon
- Grated Pecorino Pepato Cheese - 4 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Drop the onions into boiling water for 15 minutes to soften them slightly. Remove from the water and let cool. Using a sharp knife, cut off 2.5 cm from the top of each onion, finely chop it, and set aside. If necessary, trim the base so they stand securely on the baking tray. Use a tablespoon to scoop out some of the core, being careful not to damage the outer walls. Finely chop the scooped-out part and add it to the previously prepared mixture.
Step 2
Preheat the oven to 392°F. Heat a skillet on the stove, add a bit of olive oil, garlic, chopped onion, and a little bit of chopped rosemary. Sauté for 2 minutes, then reduce the heat, pour in the cream, and remove the skillet from the heat. Stir in the grated Parmesan (a couple of handfuls), season with salt and pepper.
Step 3
Wrap the onions in a good slice of smoked bacon and secure with a pointed rosemary twig or toothpick. The rosemary and bacon will release dizzying aromas while baking.
Step 4
Place the onions on a baking tray and pour the prepared onion mixture into each one. Put in the oven for 25 minutes. They will become soft and tender. You can also experiment with different cheeses.
