Baked peppers stuffed with feta, sautéed vegetables, and mushrooms

Ingredients

  • Bell Peppers - 2 lbs
  • Carrot - 17.6 oz
  • Onion - 10.6 oz
  • Champignon Mushrooms - 10.6 oz
  • Vegetable Oil - 4 tablespoons
  • Salt - to taste
  • Feta cheese - 3.5 oz
  • Parsley - 1 bunch
  • Garlic - 3 cloves

Step by Step guide

Step 1

Wash the peppers, place them on a baking sheet, and bake in the oven for 20 minutes. Turn the peppers several times to ensure even baking.

Step 2

Wash the mushrooms, chop them coarsely, and sauté in 2 tablespoons of oil.

Step 3

Chop the onion and garlic, and sauté in the remaining oil, add grated carrot, mix, and stew until cooked.

Step 4

Add the mushrooms to the onion and carrot, add salt to taste, and mix everything. Add the chopped parsley.

Step 5

Peel the peppers, make a slit, and carefully remove the seeds.

Step 6

Crumble the feta cheese.

Step 7

Stuff the peppers with feta cheese and sautéed vegetables.
