Ingredients
- Salad Potatoes - 3 pieces
- Milk - ½ cup
- Ricotta cheese - 4.2 oz
- Onion - 2.1 oz
- Salt - ¼ teaspoon
- Cheshire Cheese - 7.1 oz
- Ground Black Pepper - ¼ teaspoon
- Frozen spinach discs - 10.6 oz
- Scallions - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
Wash the potatoes well, dry them, poke several times with a fork, and wrap in foil. Place in the oven for about 1 hour until cooked. Let cool.
Step 3
Cut in half lengthwise and carefully scoop out some of the flesh, leaving a bit.
Step 4
Transfer the flesh to a bowl and mash it.
Step 5
In another bowl, whisk together the milk and ricotta, add the potato flesh, 1 cup of grated cheddar, finely chopped onion, salt, pepper, and slightly squeezed spinach.
Step 6
Spoon the mixture into the potato halves and sprinkle with cheese.
Step 7
Place on a baking sheet and bake for 15 minutes. Sprinkle with green onion and serve.
