Ingredients

  • Salt - to taste
  • Milk - 15 fl oz
  • Nutmeg - to taste
  • Chicken Egg - 1 piece
  • Butter - 0.9 oz
  • Salad Potatoes - 9 pieces
  • Roquefort cheese - 1.8 oz

Step by Step guide

Step 1

Preheat the oven to 356°F. Wash the potatoes and bake for 1 hour until they are soft. Then cut them lengthwise and scoop out the flesh with a spoon, being careful not to damage the skin. Pass the flesh through a blender to make a smooth puree. Transfer to a bowl, add the butter, cheese, beaten egg, freshly grated nutmeg, and salt. Pour in enough hot milk to achieve a thick puree.

Step 2

Fill the skins with this puree and cook under the grill for 15 minutes until a golden crust forms. Serve immediately.
