Ingredients
- Light "Lamber" cheese, 15% fat content - 3.5 oz
- Courgette - 2 pieces
- Carrot - 1 piece
- Onion - 1 head
- Garlic - 1 clove
- Tomatoes - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the zucchini, cut it in half, and scoop out the flesh from the center.
Step 2
Dice the carrots, zucchini flesh, and onion into small cubes.
Step 3
Heat a frying pan and sauté the chopped vegetables in vegetable oil, then add the minced garlic and tomato. Season with salt and pepper, and remove from heat.
Step 4
Fill the zucchini with the vegetable filling, sprinkle with grated Lambert cheese, and bake in the oven at 338°F for 15–20 minutes.
