Ingredients

  • Smelt - 2 lbs
  • Barbecue sauce - 8.8 oz
  • Onion - 1.1 oz
  • Garlic - 1 clove
  • Passata Tomato Sauce - 1 tablespoon
  • Sugar - 1 tablespoon
  • Green peppercorns - 2½ spoons
  • Ground Black Pepper - ¼ spoons

Step by Step guide

Step 1

Wrap an unpeeled garlic clove in foil and place it in an oven preheated to 392°F for about seven to eight minutes. Remove it, let it cool, and then crush it in a mortar or with a garlic press.

Step 2

Pour the barbecue sauce into a large, wide saucepan and mix it with the chopped onion, garlic, finely chopped green canned pepper, tomato sauce, and sugar.

Step 3

Bring the resulting mixture to a gentle boil and simmer for five to seven minutes, stirring to prevent the sauce from sticking to the sides. Season with salt and let it cool. Submerge the fish in the sauce, gently stir to coat the fillets on all sides, and leave to marinate for forty-five minutes.

Step 4

Preheat the grill and roast the fish on the rack for five to ten minutes, continuously brushing it with sauce from the saucepan and turning it occasionally to ensure even cooking on all sides. The finished smelt can be served hot or allowed to cool slightly.
