- Parsley - 0 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Sauté the onion in vegetable oil.
Step 2
Add the pearl barley and sauté it with the onion, stirring constantly for about 5 minutes.
Step 3
Then gradually start adding the chicken broth while continuously stirring the pearl barley.
Step 4
Cook until done (the broth may require less time).
Step 5
At the end of cooking, fold in the mascarpone.
Step 6
Add the chopped parsley and grated cheese (Parmesan or a similar textured cheese).
