Ingredients
- Fresh basil leaves - 2 bunches
- Onion - 2 heads
- Garlic - 1 clove
- Ghee - 1 tablespoon
- Wheat Flour - 1 tablespoon
- Spinach - 7.1 oz
- Chicken Broth - 25 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Cream - 5 fl oz
- Ground Nutmeg - to taste
- Grated Pecorino Pepato Cheese - 2 tablespoons
Step by Step guide
Step 1
Wash and dry the basil. Tear the leaves and chop finely.
Step 2
Peel the onion and garlic. Dice the onion and crush the garlic. Sauté the onion and garlic in ghee. Then sprinkle with flour and lightly brown. Pour in the vegetable broth.
Step 3
Add the spinach, bring to a boil, and add the basil. Blend the soup with an immersion blender until smooth, seasoning with salt, pepper, and nutmeg.
Step 4
Lightly whip the cream.
Step 5
Pour the soup into 4 bowls, add a small amount of cream, sprinkle with cheese, and garnish with basil.
