Ingredients
- Beans - 10.6 oz
- Garlic - 2 cloves
- Bay leaf - 1 piece
- Olive Oil - 1 tablespoon
- Wheat Flour - 2 tablespoons
- Butter - 0.9 oz
- Salt - to taste
Step by Step guide
Step 1
Soak the beans in cold water for 3–5 hours, then drain the water, transfer the beans to a large pot, fill it with water to the top, and bring to a boil. Drain the water again and add 2 liters of fresh cold water, garlic, bay leaf, and olive oil. Bring to a boil again, then reduce the heat and cook for 1–1.5 hours until the beans are soft. Then remove the pot from the heat and let it cool slightly. Remove the garlic and bay leaf.
Step 2
Blend the beans in portions in a blender until you get a thick paste. Then strain through a sieve into a clean pot. Mix the flour with two tablespoons of bean paste, add this mixture to the remaining beans, mix well, and return to the heat—stirring, cook for 8 minutes.
Step 3
Add salt to taste and, before serving, add the butter so that it melts. Serve with croutons, toast, or simply crackers.
