Ingredients
- Olive Oil - 2 tablespoons
- Pancetta - 4.9 oz
- Onion - 2 heads
- Garlic - 3 cloves
- Leek - 2 pieces
- Carrot - 2 pieces
- Fava Beans - 12.3 oz
- Chicken Broth - 1 qt
Step by Step guide
Step 1
Heat the olive oil in a large pot. Add diced pancetta and finely chopped onion. Cook over medium heat for 5 minutes until the onion is soft and the pancetta is slightly browned.
Step 2
Add minced garlic, finely chopped leek (white part only), and finely chopped carrot. Cover and cook, stirring, over low heat for 15 minutes until the vegetables are soft.
Step 3
Add the beans (peeled) and broth. Bring to a boil, reduce the heat, and simmer for 20 minutes until the beans are tender. Pour 2 ladles of soup into a blender and puree until smooth. Return to the pot. Season with salt and serve in small bowls drizzled with olive oil.
