Description

  • Chickpea - 14.1 oz
  • Red Canned Beans - 14.1 oz
  • Canned Corn - 14.1 oz
  • Cottage cheese - 14.1 oz
  • Olive Oil - 3 fl oz
  • Mint - 1.8 oz
  • Meyer Lemon Juice - 0 fl oz
  • Cayenne Pepper - to taste

Step by Step guide

Step 1

Remove the beans, corn, and chickpeas from the cans and rinse them to remove the brine they were canned in. Drain the water used for rinsing.

Step 2

Whisk together olive oil, lemon juice, and cayenne pepper.

Step 3

Remove the mint leaves and discard the stems or use them for other purposes. You can brew tea from the leaves, for example.

Step 4

Place the beans, chickpeas, and corn in a bowl, then top with cottage cheese. Drizzle everything with oil and sprinkle with fresh mint leaves.
