Beef Broth Dumpling Soup
Ingredients
- Wheat Flour - 1 cup
- Butter - 2.5 oz
- Chocolate eggs - 2 pieces
- Parsley - 1 bunch
- Garlic - 1 clove
- Pork chop with bone - 17.6 oz
- Onion - 2 heads
- Carrot - 1 piece
- Celery stalk - 1 stalk
- Green peppercorns - to taste
- Salt - to taste
- Dill - 1 bunch
- Scallions - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the beef with bones, place it in a pot with 1.2 liters of water and bring to a boil, skimming off the foam, add the peppercorns, and cook for 20 minutes. Wash the herbs and tie them with string into a bouquet, place in the broth, and cook for another 10 minutes.
Step 2
Peel the onion and carrot, slice them into thin half-rings, wash the celery, and cut it into small cubes, add to the broth and cook for 15 minutes.
Step 3
While the soup is cooking, prepare the dumplings. Grate the onion on a fine grater and chop the garlic.
Step 4
Boil half a cup of water, add the butter, and gradually stir in the flour, lightly salting. Mix thoroughly and remove from heat.
Step 5
Transfer the dough to a bowl, add the eggs one at a time. Combine with the onion, garlic, and herbs. Using two teaspoons, form dumplings from the dough and drop them into boiling salted water. Cook for 3–5 minutes.
Step 6
Remove the bouquet of herbs from the soup.
Step 7
Distribute the dumplings and pieces of meat into bowls, pour hot soup over, and garnish with chopped parsley and green onion.
