Description
Tzachton is a sour milk sauce from Caucasian cuisine.
Ingredients
- Ground coriander - 1 bunch
- Beef - 14.1 oz
- Sour Cream - 6.3 oz
- Garlic - 2 cloves
- Mild Chili Spice - ½ piece
- Khmeli-suneli - ½ teaspoon
- Salt - to taste
Step by Step guide
Step 1
Wash the meat and place it in a pot with boiling water.
Step 2
Bring to a boil, reduce the heat, skim off the foam, and simmer for 40–60 minutes. Towards the end of cooking, add salt.
Step 3
Cool the meat and cut it into strips against the grain.
Step 4
Prepare the tzachton: peel the garlic and finely chop it or press it through a garlic press. Wash the herbs, dry them, and chop them.
Step 5
Wash the chili pepper, dry it, cut the pod, and remove the seeds. Cut the required amount of pepper and dice it into small cubes.
Step 6
Place the garlic, herbs, chili pepper, and a pinch of coarse salt in a mortar and grind (instead of a mortar, the herbs with garlic and pepper can be blended in a blender (in this case, do not add salt)).
Step 7
In a bowl, combine the sour cream, chopped herbs with garlic and pepper, and add khmeli-suneli.
Step 8
Mix the sauce well, salt to taste, and if needed, add a little more seasoning.
Step 9
Pour the sauce over the meat and mix. Place the meat in tzachton in the refrigerator and let it marinate for 1 hour.
