Beef Kharcho Soup with Walnuts
Ingredients
- Ground coriander - to taste
- Beef - 21.2 oz
- Satsivi - 1.8 oz
- Onion - 2 pieces
- Rice - 5.3 oz
- Walnuts - 3.5 oz
- Garlic - 4 cloves
- Khmeli-suneli - 1 teaspoon
- Cayenne Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Cut the meat into pieces and pour in 3 liters of water. Skim off the foam before boiling. Cook for one and a half hours.
Step 2
Add 2 large tablespoons of satsivi sauce. You can use tkemali and adjust the amount to your taste — the broth should be slightly sour.
Step 3
Slice the onion into thin strips and add it to the broth, cooking for another half hour.
Step 4
Add the rinsed rice (I use long-grain). Cook for 10 minutes.
Step 5
Toast the walnuts, crush them in a mortar, and add to the soup. Grate the garlic on a fine grater (or use a garlic press) and add it to the soup. Cook for 10 minutes.
Step 6
Add khmeli-suneli (I add a bit more than a teaspoon, which is also to taste), red hot pepper to taste for spiciness, and salt. Cook for another 10 minutes.
Step 7
Let it sit. When serving, sprinkle with chopped cilantro or parsley.
