Description
If meatballs are destined to be immersed in soup or broth, it’s best not to mix in any flour-based ingredients; otherwise, the dish will take on an unappealing cloudiness. We sent beef meatballs into a boiling broth—this can be vegetable, chicken, or meat broth—and then strained it. The result is simple, hearty, and beautiful, especially if you take the time to make homemade wheat croutons.
