Recipe taken from the book by John Smith 'Armenian Cuisine' (1960).

Ingredients

  • Beef - 4.4 oz
  • Onion - 0.7 oz
  • Carrot - 0.7 oz
  • Clarified Butter - 0.4 oz
  • Rice - 0.7 oz
  • Potato - 3.5 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Parsley - to taste

Step by Step guide

Step 1

Wash the piece of beef (trim) and place it in a pot, cover with water, and simmer on low heat until the meat is cooked, periodically skimming off the foam.

Step 2

Strain the broth and cut the beef into small pieces.

Step 3

In the hot strained broth, add the pieces of beef, rinsed and sorted rice, diced and sautéed carrot and onion, coarsely chopped potato, salt, and pepper, and cook the soup until the rice is done.

Step 4

Serve the soup, sprinkled with parsley.
