Ingredients
- Beef - 28.2 oz
- Onion - 2 heads
- Tomatoes - 3 pieces
- Orange Bell Peppers - 2 pieces
- Pickled capers - 1.8 oz
- Safflower Oil - 0 fl oz
- Lemon - 1 piece
- Orange zest - 1 piece
- Dijon Mustard - 3½ tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the meat, finely chop the onion. Cut the capers into 4 pieces each. Dice the tomatoes. Cut the yellow pepper into small squares.
Step 2
Mix the onion, capers, and meat in one bowl, and the pepper and tomatoes in another.
Step 3
For the dressing, take 2 cups (250 g each). Pour a little less than 0.5 tablespoons of sunflower oil into one, squeeze half a lemon and half an orange, add approximately 2–2.5 tablespoons of Dijon mustard, and season with salt and pepper.
Step 4
In the second bowl, pour 1/4 tablespoon of oil, squeeze a quarter of a lemon and the same amount of orange, and add 1 tablespoon of Dijon mustard. Season with salt and pepper as well. Add the first mixture to the meat and the second to the tomatoes with the pepper. Mix well.
Step 5
Take a round mold, layer the meat first, then the tomatoes with the pepper, top with a quail yolk, and sprinkle with black pepper.
