Ingredients

  • Gherkins - 3.5 oz
  • Spanish onions - 1.8 oz
  • Veal Tenderloin - 14.1 oz
  • Olives stuffed with lemon - 3.5 oz
  • Soy Sauce - 1 fl oz
  • Mirin - 3 fl oz
  • Vegetable Oil - 4 fl oz
  • Dijon Mustard - 0.4 oz
  • Chipotle Pepper Paste - 0.4 oz
  • Salt - to taste
  • Champagne Vinegar - 0 fl oz
  • Ground Black Pepper - to taste
  • Leek - to taste

Step by Step guide

Step 1

For the tartar sauce, mix vegetable oil, soy sauce, mirin, Dijon mustard, paprika paste, and vinegar.

Step 2

Finely chop the beef, cornichons, and red onion. Mix with the dressing, then add salt and pepper.

Step 3

For the tapenade, you need to remove the pits from the olives, if they have them, and chop them very finely.

Step 4

Spoon the tartar into small molds, top with a layer of tapenade, and garnish with chives, resembling fresh shoots of grass just sprouting from the ground.
