Beer Soup with Caraway-Garlic Croutons
Ingredients
- Light Beer - 17 fl oz
- 20% Sour Cream - 7.1 oz
- Egg white - 2 pieces
- Sugar - 2 teaspoons
- Grated Pecorino Pepato Cheese - 8.8 oz
- Salt - ½ teaspoon
- Ground Caraway - 2 teaspoons
- Garlic - 3 cloves
- Ground Black Pepper - to taste
- Nut Bread - 1 piece
Step by Step guide
Step 1
Whisk the yolks with sugar and salt. Add the sour cream and beat until smooth.
Step 2
Bring the beer to a boil in an enamel pot, remove from heat, stir in the sour cream-yolk mixture, add caraway seeds and grated cheese. Then reheat on low heat, stirring constantly, but do not bring to a boil.
Step 3
Cut the bread into random shapes (I cut it into sticks), sprinkle with salt, and dry in the oven.
Step 4
Sprinkle the hot croutons with crushed garlic and caraway seeds.
Step 5
Pour the soup into serving bowls, add a few croutons, and garnish with a sprig of herbs.
