- Sugar - 1 teaspoon
- Tomatoes - 2 lbs
- Onion - 1 piece
- Safflower Oil - 3 tablespoons
- Mustard Greens - 4 lbs
Step by Step guide
Step 1
Wash the beet greens, chop them finely, place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 20 minutes. Drain the water.
Step 2
Heat the oil in a skillet and sauté the finely chopped onion over low heat, stirring, for 5 minutes until it becomes soft and translucent. Add the finely chopped tomatoes and cook, mashing them with a spatula, for another 20 minutes.
Step 3
Stir in the sugar, a pinch of salt, the beet greens, and aromatic herbs – cook for another 3 minutes. Serve immediately.
