Beetroot Borscht with Pork Ribs

Ingredients

  • Pork Skewers - 2 lbs
  • Beetroot - 17.6 oz
  • White Cabbage - 17.6 oz
  • Salad Potatoes - 2 lbs
  • Carrot - 1 piece
  • Orange Bell Peppers - 1 piece
  • Onion - 1 head
  • Spiced Tomato Juice - 1 qt
  • Garlic - 1 head
  • Bay leaf - 2 pieces
  • Spices - 5 pieces
  • Lemon-Pepper Mix - 1 teaspoon
  • Salt - to taste
  • Herbs - to taste
  • Vegetable Oil - 3 fl oz

Thoroughly wash the pork ribs under running water and cut them into portion-sized pieces, place them in a pot, cover with water, add salt to taste, bring to a boil, and periodically remove any foam.

Thoroughly wash and peel the beetroot.

Cut the beetroot into small strips.

Add the prepared beetroot to the pot with the boiling meat. Add bay leaves and allspice, and cook until the meat is tender, about 30–40 minutes.

Peel the potatoes, wash them well, cut them into strips or cubes, cover with water, and set aside.

Peel the onion and carrot. Pour 100 ml of vegetable oil into a frying pan. Dice or julienne the peeled onion and carrot and place them in the frying pan.

Thoroughly wash the bell pepper, remove the seeds and stems, cut it into small cubes or strips, and add it to the frying pan with the onion and carrot.

Pour 1 liter of thick tomato juice into the frying pan with the cooked vegetables. Simmer for about 10 minutes with the lid off.

Add the potatoes (without water) to the broth with the meat and beetroot, bring to a boil, remove any foam if necessary, and add salt to taste. Cook until the potatoes are tender, about 20 minutes.

Thoroughly wash the cabbage under running water, cut it into thin strips, and place it in a separate container.

Wash the parsley well, remove any excess, chop finely, and add it to the cabbage. Peel and wash the garlic, press it through a garlic press, and add it to the container with the cabbage and parsley.

Add the prepared cabbage, parsley, and garlic to the pot.

Transfer the vegetables with tomato juice from the frying pan to the pot with the cooked potatoes and meat. Add 1 teaspoon of ground pepper mix to the pot.

Gently mix all the ingredients in the pot, add salt to taste if necessary, and bring to a boil. Boil for about 10 minutes with the lid off over medium heat.
